{"id":7320,"date":"2020-11-30T11:21:09","date_gmt":"2020-11-30T10:21:09","guid":{"rendered":"https:\/\/www.spinato.it\/risotto-di-radicchio-di-treviso-igp\/"},"modified":"2024-07-16T11:57:26","modified_gmt":"2024-07-16T09:57:26","slug":"risotto-with-radicchio-di-treviso-igp","status":"publish","type":"post","link":"https:\/\/www.spinato.it\/en\/risotto-with-radicchio-di-treviso-igp\/","title":{"rendered":"Risotto with Radicchio di Treviso IGP"},"content":{"rendered":"\n<p>For this Christmas, Anna wanted to share with you her special recipe for a first course made with excellent products from her land: risotto with Treviso Radicchio IGP creamed with Piave Vecchio DOP (aged) cheese.<\/p>\n\n\n\n<!--more-->\n\n\n<p>Are you ready?<\/p>\n<p><b>INGREDIENTS<\/b> 2 people<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2817 alignleft\" src=\"https:\/\/www.spinato.it\/wp-content\/uploads\/2020\/11\/160gr-riso-arborio-1-1024x724.jpg\" alt=\"\" width=\"462\" height=\"327\" \/><\/p>\n<p><em>Arborio rice,<\/em>\u00a0160gr<\/p>\n<p><em>Red onion,<\/em>\u00a0half<\/p>\n<p><em>Butter,<\/em>\u00a025gr<\/p>\n<p><em>Light vegetable broth,<\/em><em>\u00a01.2l<\/em><\/p>\n<p><em>Radicchio di Treviso IGP,<\/em>\u00a0a stalk<\/p>\n<p><em>Piave VecchioDOP cheese,<\/em>\u00a0150gr<\/p>\n<p><em>Anna Spinato\u2019s Cabernet Sauvignon<\/em>, half glass<\/p>\n<p><em>Pink pepper,<\/em>\u00a0to taste<\/p>\n<p>\u00a0<\/p>\n<p><em>Pepe rosa,<\/em> q.b.<\/p>\n<h2>Procedimento<\/h2>\n<p>Cut the Treviso Radicchio IGP in small strips. Melt 1\/3 of the butter in a saucepan and add the chopped red onion. Simmer on low heat for few minutes. Add the rice and, while stirring, let it toast for 2 minutes. Blend with half glass of Anna Spinato\u2019s Cabernet Sauvignon.<\/p>\n\n<p>Add a ladleful of brothfrom time to time, stirring, as the previous one is absorbed. Halfway through the cooking, add the radicchio, keeping aside some tips as garnish.<\/p>\n\n<p>After about 15 minutes,the rice will be cooked.
